Knowing how to roast garlic is definitely a skill you need to have if you truly love it. When garlic is roasted it the flavor mellows out and the garlic becomes slightly sweet, especially when it's allowed to carmelize, and it becomes so smooth and creamy that it spreads like butter.
I use it in hummus, mashed potatoes, on steaks, under the skin of chicken before cooking, in sauces...the possibilities are endless. Enjoy!
